medium size bath towel
plenty socks
warm clothes for sleeping (long johns or jogging pants)
small pillow (travel and in Ukraine)
toiletries
picture of family (to show friends in Ukraine)
spending money ($20-$50 will be sufficient, we may have time to visit kiev).
dry snacks (body gets messed up with time difference and you may find yourself hungry at midnight)
winter coat (if you dont' have one, we can ask church for one to borrow)
gloves
hat

You will be fed 3 meals a day.
Lunch is the main meal in Ukraine, breakfast and supper are of the lighter variety.  
There are also scheduled breaks during the day for a coffee/tea/fellowship as part of culture.
